1 Crown of the beet, which bears the leaves (usually trimmed off together with the leaves during harvest; sucrose content only 0.3%).
2 Neck of the beet, which bears no leaves and usually no roots and forms the transition to the main body of the beet; sucrose content 2.7%.
3 Main body of the root (hypocotyl), storage tissue containing 97% sucrose
4 Beet tail, which usually breaks off during harvest.
